Babe's Meat & Counter started in 2013 as a farmers market stall at Pinecrest Gardens under the name Babe Froman Fine Sausages, where Jason and Melanie Schoendorfer sold hand-crafted sausages to South Miami-Dade locals. They opened the brick-and-mortar butcher shop and deli in 2018 in Palmetto Bay, building a full-service counter around in-house smoked meats, house-made pickles, and a smashburger that has become one of the most acclaimed in Miami. In March 2026, after eight years operating as a takeout-only counter, they announced an expansion adding approximately 40 seats - the first dining room in the shop's history.
The Babe's Burger is a butcher's burger - the weekly patty blend pulls from whatever Prime and Wagyu cuts are available at the counter that week, ground fresh in-house daily. The fat trimmed from the blend goes into the fryer for the beef-fat fries. The smash is kept slightly thicker than most to let the meat speak, with American cheese, house-made pickles, and sriracha mayo on a Martin's potato roll that steams in the wrapper.
