Tucker's Onion Burgers opened in 2011 in Oklahoma City's Uptown 23rd district, founded by Sean Ray, Heather Paul, and Keith Paul of A Good Egg Dining Group — and named after the Pauls' English Mastiff. The concept was simple and deliberate: bring the Depression-era Oklahoma onion burger tradition back as a premium experience, using Creekstone Farms all-natural beef and buns from Prairie Thunder Baking Co. rather than commodity inputs. It was Oklahoma City's first premium interpretation of the style that originated in El Reno roadside cafes in the 1920s.
The Oklahoma-style technique is everything: hand-shredded fresh white onions are piled high on the raw beef ball, then smashed into the patty with a spatula on a flat-top griddle. The onions don't go on as a topping — they are pressed into the meat and caramelize as the patty cooks, fusing sweetness, char, and beef fat into a single inseparable layer. Tucker's does this with Creekstone Farms Black Angus beef, and serves it on a toasted Prairie Thunder bun with American cheese and classic mustard-and-pickle build. Order the double.
