Chef Mike Aldridge started selling burgers from his porch in New Orleans' Mid-City neighborhood during the 2020 pandemic lockdown — a "super secret smash burger pop-up" that built a following fast enough to justify a real move. He relocated to Portland in early 2021, set up a food cart on SE Stark Street, and sold over 1,000 burgers in his first eight days. The Oregonian's Michael Russell called it Portland's best smash burger that same year. MidCity has since grown to multiple cart locations across the city.
