Fozzy's Bar & Grill opened in Franklin in July 2025, taking over the former Cool Springs Brewery off Cool Springs Boulevard and bringing an Illinois-inspired gastropub concept to Williamson County. The Chicago-influenced menu - headlined by the Chicago Italian beef alongside its smash burgers - quickly earned a 4.9 Google rating from locals who appreciated a scratch kitchen in what's otherwise a competitive sports bar corridor. The concept launched its first location in Spring Hill in 2020 before expanding to Cool Springs.
The Smash Burger ($19.50) is built on a 1/2 lb artisan brisket & chuck blend angus patty - a premium beef specification uncommon in the smashburger category, where most competitors rely on standard ground chuck. Two patties are smashed per order, topped with American cheese, secret smash sauce, shredded lettuce, tomato, and pickle. The brisket-forward blend adds depth and a richer crust than lean blends produce, and the $19.50 price point reflects the quality.
