Patty Palace launched in September 2023 in the side yard of St. Elmo Brewing Company on South Austin's Industrial Boulevard — the kind of laid-back, beer garden setting that makes a great burger taste even better. Chef Dillon Misonznick (also of Spicy Boys fried chicken) built the concept around one core idea: take Texas beef and smash it right.
The Double Palace Burger uses a 75/25 Texas beef blend — leaner ratio than many smash spots, but dialed in for maximum sear on the flat top. Extra sharp American cheese (not mild — sharp), grilled onions pressed into the patty during the cook, Kosher dill pickles, yellow mustard, and a house special sauce. It's a precise burger without a lot of flourish, and The Infatuation called it their favorite smashburger in Austin.
A second trailer location opened at Zilker Brewing on East 6th Street, giving East Austin access to the same menu. Order online through their Square site for pickup.
