Skinny Louie opened in late 2023 in Wynwood and quickly became one of Miami's most visible smashburger brands after surging across Instagram and TikTok. Founded by Gonzalo Rubino, the concept pairs a short menu and retro branding with high-throughput execution and deep late-night availability.
The regular-menu flagship is the Skinny Louie Cheeseburger: double-smashed fresh Black Angus, double American cheese, grilled onions, pickles, and Louie sauce on a potato bun. The 2025 SOBEWFF win came from the Wagyu Louie competition build, which is separate from the standard menu format.
This isn't Miami's best smashburger (despite the deluge of influencer hype). The edges of the patties aren't as crispy as we'd like, and the burgers are so greasy that bun sogginess is an issue even if you're eating there.
These are tasty burgers. You'll be glad you got a Skinny Louie, especially if it's after the staff at Gramp's has broken out the mops.
