Fatso's Last Stand opened in Chicago's Ukrainian Village in 2011 with a single mission: serve the city's best char dogs - always charred, never steamed, packed with the flavor of a thousand summer BBQs. Owner Scott Floersheimer added the Fatso Smash to the menu in January 2016, bringing the same cooking conviction to a double Angus beef patty smashed on the flat top. The Burger Fest panel took notice: Fatso's won Critics Choice at the Roscoe Village Burger Fest in both 2019 and 2024.
The Fatso Smash is a double-patty build of 100% Angus beef smashed to a full-coverage sear, with American cheese, lettuce, tomato, pickles, onions, and Fatso's special sauce. At a restaurant where the hot dogs get the marquee billing, the smash burger earns its reputation the hard way - by winning against dedicated burger restaurants in front of Chicago food critics. The 'Super Ooey Gooey' variant is the move if you want to lean into the excess.
