The Story

Brady Street's Critic-Backed Smash.
A bar burger with serious believers.

Saint Bibiana opened in summer 2021 when Jeno and Lorenzo Cataldo — who also run Jo-Cats Pub and Dorsia — converted a former wine shop on Brady Street into something Milwaukee hadn't seen before: a bar built around a burger. The interior was designed to resemble a church, complete with a choir loft and altar, and the restaurant was named after Saint Bibiana — the patron saint of hangovers. From the beginning, the Bibiana Burger anchored the menu and built a following strong enough to land the restaurant in the city's best-burger conversation within its first year.

The Bibiana Burger is built around two 3-oz. patties smashed to produce a full-coverage caramelized crust, topped with American cheese, griddled onions, thick-sliced pickles, and the house Saint Sauce on a toasted sesame seed bun. Milwaukee Magazine's Ann Christenson called it 'a hot, juicy stack of meat' with 'the holy quaternity of American cheese, grilled onions, pickles and tangy special sauce on one of the better toasted, chewy sesame seed buns' in her Tour of Burgers. MJS dining critic Rachel Bernhard named it one of her new favorites in the city. The bun — often an afterthought at smash-burger spots — is a specific point of editorial praise here.

Context Note

Saint Bibiana is a Brady Street bar, tavern, and late-night venue as much as a burger destination. This Smash Score reflects the Bibiana Burger specifically, not the full nightlife experience.

The Bibiana Burger is named after the restaurant's patron saint — the same Saint Bibiana (patron saint of hangovers) who inspired the restaurant's name and design. OnMilwaukee Burger Trail noted 'glistening caramelized burger patties cloaked in melted cheese and resting on a bed of thinly sliced griddled onion' and 'golden brown seeded bun.' Milwaukee Magazine's Ann Christenson (in her Tour of Burgers guide) called it 'a hot, juicy stack of meat' featuring 'the holy quaternity of American cheese, grilled onions, pickles and tangy special sauce on one of the better toasted, chewy sesame seed buns' in her extended survey. Milwaukee Journal Sentinel critic Rachel Bernhard named it one of her new favorite burgers in the city. Urban Milwaukee said it 'drips umami.'

What Critics & Diners Say

Review Excerpts

"

Whoever coined the phrase 'a hot, juicy stack of meat' was talking about this burger — two 3-ounce patties with the holy quaternity of American cheese, grilled onions, pickles and tangy special sauce on one of the better toasted, chewy sesame seed buns in my Tour of Burgers.

Milwaukee Magazine
"

Dining critic Rachel Bernhard highlighted the Bibiana Burger as one of her new favorite burgers in the city — seasoned well, juicy, and stacked with the right toppings on a sesame seed bun.

Milwaukee Journal Sentinel — Best Bites
"

One of the best burgers in Milwaukee — voted top five ever since they opened. The Bibiana Burger has absolutely perfect caramelized crusty edges.

Google Reviews
"

The Bibiana Burger drips umami thanks to melting American cheese, thick-sliced dill pickles, grilled onions, and a tasty Saint Bibiana house sauce.

Urban Milwaukee
"

The Bibiana Burger delivered on all it promised — glistening caramelized burger patties cloaked in melted cheese and resting on a bed of thinly sliced griddled onion. For $13 with a bag of fries, you don't blink.

OnMilwaukee — Burger Trail
"

Seriously, some of the best french fries and fried pickle chips I've ever had. [But note: one reviewer flagged a billing concern over tip practices.]

Our Assessment

Strengths & Caveats

✓ Strengths
Three of Milwaukee's most authoritative food critics — Lori Fredrich (OnMilwaukee), Ann Christenson (Milwaukee Magazine), and Rachel Bernhard (MJS) — have all praised the Bibiana Burger since opening
The 'holy quaternity' of griddled onions, American cheese, sliced pickles, and house Saint Sauce delivers what Ann Christenson calls 'a hot, juicy stack of meat' with 'one of the better toasted, chewy sesame seed buns' in her Tour of Burgers
Consistent Google rating of 4.4/5+ — community calls it 'absolutely perfect caramelized crusty edges' and 'top five ever since they opened'
Exceptional value: $5 Bibiana Burger during Saint Square happy hour (Mon-Fri 4-6pm) — one of the best burger deals in Milwaukee
Church-inspired interior (choir loft, altar design) in a former wine shop creates a genuinely distinctive atmosphere on Brady Street
Late-night kitchen until 10pm (bar open until 2:30am on weekends) — one of the few quality smash options available after 10pm in Milwaukee
Sister restaurant network (Jo-Cats Pub, Dorsia) suggests operational maturity and culinary investment
⚠ Caveats
OnMilwaukee Burger Trail review (Aug 2021) is ~4.7 years old — while Saint Bibiana remains on Lori Fredrich's Must Try list, no updated dedicated Burger Trail re-review has been published
Billing practice complaint surfaced in TripAdvisor (alleged unauthorized tip addition) and echoed in one Google review — isolated but worth noting for service consistency
Yelp star rating unconfirmed as of May 2026 (67 reviews, 403 block on fetch); cannot verify Yelp community sentiment independently
Saint Bibiana is primarily a bar and nightclub; the late-night atmosphere may not appeal to those seeking a focused daytime burger destination
At $14, the standard Bibiana Burger is priced above most Milwaukee fast-casual smash operations (compare: Archie's Flat Top The Archie at $12, Patty Shack at ~$13)
