Saint Bibiana opened in summer 2021 when Jeno and Lorenzo Cataldo — who also run Jo-Cats Pub and Dorsia — converted a former wine shop on Brady Street into something Milwaukee hadn't seen before: a bar built around a burger. The interior was designed to resemble a church, complete with a choir loft and altar, and the restaurant was named after Saint Bibiana — the patron saint of hangovers. From the beginning, the Bibiana Burger anchored the menu and built a following strong enough to land the restaurant in the city's best-burger conversation within its first year.
The Bibiana Burger is built around two 3-oz. patties smashed to produce a full-coverage caramelized crust, topped with American cheese, griddled onions, thick-sliced pickles, and the house Saint Sauce on a toasted sesame seed bun. Milwaukee Magazine's Ann Christenson called it 'a hot, juicy stack of meat' with 'the holy quaternity of American cheese, grilled onions, pickles and tangy special sauce on one of the better toasted, chewy sesame seed buns' in her Tour of Burgers. MJS dining critic Rachel Bernhard named it one of her new favorites in the city. The bun — often an afterthought at smash-burger spots — is a specific point of editorial praise here.
