The Story

Holy Cross Southern Comfort, Smashed
Local Indiana beef in a dog-friendly dive.

Natural State Provisions is the work of Adam and Alicia Sweet, the couple behind King Dough pizza, who turned a test kitchen in Fishers into a full-scale Holy Cross restaurant in 2022. The name nods to Arkansas - the Natural State - where Adam Sweet grew up, and the menu follows: sweet-tea-brined fried chicken, catfish, fried bologna, and a smash burger that earns its spot on the menu with Fisher Farms beef and Heirloom Acres tomatoes. The space is the old Flat12 / Rad Brewing building on Dorman Street, now filled with taxidermy, flour-sack art, and Pax Verum beer on tap.

Natural State Provisions uses local Indiana producers for its smash burger - Fischer Farms beef smashed on the griddle, Heirloom Acres tomatoes, American cheese, pickles, lettuce, onion, and house burger sauce. The smaller 'Twitty' build (a nod to Conway Twitty's country-Southern legacy) runs $9 on a sesame seed bun. Indianapolis Monthly called it 'as classic as can be' - a burger that fits the dog-and-dive-bar setting without trying to be anything it's not. Order the sweet potato fries and a Pax Verum draft alongside.

Smash Atlas Context Note

Natural State Provisions is a Southern comfort-food restaurant rather than a burger-first operation. Editorial coverage is credible, but critics generally position the smash burger as a solid supporting item instead of the kitchen's must-order dish.

The Smash Burger at NSP sources from local Indiana producers - Fischer Farms beef and Heirloom Acres tomatoes - giving it a farm-to-dive-bar character that fits the Arkansas-Southern concept. Indianapolis Monthly called it 'as classic as can be.' The Twitty Burger (named in the spirit of Conway Twitty, fitting the Southern roots) is a $9 option for a lighter build. The restaurant's must-order per Indy Monthly is actually the pulled pork sandwich, but the smash burger earns its place as a solid, unpretentious everyday option.
