Herbie's Burgers started as backyard smashes and DIY show pop-ups in Albany, NY in 2021, founded by Nick Warchol, Noah Bondy, and Aaron Wilson. By February 2026, the small upstate chain had opened its 8th location - and its first in New York City - on the south end of Roebling Street in Williamsburg. The brand's mascot is 'Herbie,' a half-boy, half-hamburger nerd for the people whose origin is kept deliberately mysterious. Within weeks of opening, The Infatuation ranked Herbie's #5 in its NYC Smashburger Power Rankings.
Herbie's defining technique is the extreme smash: two-ounce grass-fed patties pressed so flat they go lacy, letting light through the beef and creating '360-degree crunch' on every bite - a texture the Infatuation said could be measured in decibels. The double is topped with American cheese, homemade pickles, lightly griddled onions, lettuce, tomato, and Nerdy Sauce on a St. Pierre sesame brioche bun. The fries are Idaho potato, thin and McDonald's-esque - intentionally so.
Those patties, made from local grass-fed beef, are nice and greasy, with a crunch that can be measured in decibels. The $10 double smash is undeniably great.
Herbie's right now is slinging nothing but bangers.
We were so over smashburgers, but then Herbie's came along. They press grass-fed beef into two-ounce patties, and smash them to within a few millimeters of their lives so they're lacey enough to let the light through.
Finding great late night food in Williamsburg isn't the easiest, but Herbie's is always there for you, smashing some excellent burgers until 2am, seven days a week.
The two patties provide 360-degree crunch, topped with lettuce, tomato, pickles, lightly-griddled onions, American cheese, and 'Nerdy Sauce,' which pretty much tastes like special sauce.
Look past the sticker that says MILF ('Man I Love Fries'), and get some fries. They're McDonald's-esque - just how we like them.
Sure, the place looks like Starburst took over a McDonald's, and has an open call for franchisees on their site, but the $10 double smash is undeniably great.
