Atomic Cowboy opened on the corner of Colfax and Adams in December 2004 when Drew Shader took over a dive bar at age 21. A few years of boredom later, he added pizza ovens - and the slices went crazy. Fat Sully's NY Pizza and the Lights Out Burger evolved from that bar-kitchen gamble into some of the most acclaimed food on East Colfax, surviving the Great Recession, COVID-19, and expanding to nine locations across Colorado, Missouri, and Kansas.
Two smash patties with aged American cheese, house-made pickles, diced onion, and burger sauce on a garlic butter-toasted brioche bun. The double smash gives both patties full-edge-to-edge crust, and the aged American is laid on during the cook so it melts completely into the patty stack. It won Westword's Best Hamburger in 2023 and made 5280's Best Burgers in Denver list - at a price point that made DiningOut's Low-Brow (value) category, not the luxury tier.
