Antoine 'Twan' Villaume arrived in Denver in February 2020, three weeks before lockdown. He spent the months that followed in his apartment writing, reading, and refining what would become Twansburger - a distilled, three-item smash burger concept born from pandemic solitude and a decade of fine-dining discipline at Gjelina in Venice, California. The pop-up debuted at NTMRKT market in early 2021, moved through Finn's Manor courtyard, and now operates Friday through Sunday in the alleyway behind La Diabla Pozole y Mezcal at 2233 Larimer St.
Twansburger runs on a simple premise: house-ground chuck and brisket from organic Angus, sourced from southern Colorado, smashed as flat as physically possible onto a hot griddle. The result - per Westword - is patties that are 'intricately laced, crispy and meaty,' the product of a technique obsession that Villaume describes as the most carefully developed thing he has ever cooked. Housemade pickles, diced onion, organic iceberg, American cheese, and a three-part house sauce (mayo, ketchup, French mustard) on a Martin's potato bun. $13. That's the whole system.

Mini cult sensation over the last five years, thanks to his laser-focused dedication to perfect execution of a simple product. The smashburgers are pressed impossibly flat as they're cooked, making them intricately laced, crispy and meaty.
The smashburgers are superb. They truly have lacy edges. These are flat out among the best smashburgers I have ever had.
