Buying guide / Heat

The best surface is the one that gets mean.

For smash burgers, heat retention and a flat cooking surface matter more than features. A cast-iron or carbon-steel skillet can make an excellent smash at home; larger flat-tops earn their space when you cook for a crowd.

Quick answer

Start with a cast-iron skillet if you already own one. Choose carbon steel when you want a lighter, smoother pan. Move to an indoor griddle, Blackstone-style flat-top, or portable setup only when your cooking space and guest count call for it.

Start with the pan you have, not a brand name.

A smash burger needs direct, sustained contact with hot metal. That makes material, usable width, and heat recovery more important than a lid, a logo, or a bundled spatula. A well-heated cast-iron skillet is enough for a great double. Carbon steel is another strong indoor choice. A Blackstone-style flat-top earns its space when you need burner power and room for several burgers at once.

What we are not recommending

Thin nonstick pans, deep grill grates, and burger kits that make the cook feel more complicated. A great smash burger is a flat-surface problem.
