Choose a thin, stiff metal turner with a sharp front edge. A flexible fish spatula is great for fish; it is not the right answer for a hard-crusted smash burger.

The best smash burger tools are not fancy. A good spatula slips under the patty in one confident movement, cleanly separating the crust from the steel. If the blade bends, is too thick, or has a rounded leading edge, it will leave the best part of the burger behind.

How to get under the patty
Wait until the first side has developed color, then approach from the side rather than attacking straight down. Use the sharp edge to scrape across the surface. A little pressure is good; repeated little pokes are not. Once it releases, flip with purpose and give the second side just enough time to finish.
What to skip
A thick plastic turner, a flexible silicone head, or a small round pancake flipper. None are built to separate a browned meat edge from hot metal. Spend on the boring, stiff, rectangular tool and the cook gets easier.
